Ingredients
- 2 1/2 cups of all-purpose flour plus even more dust
- 2 tablespoons of baking powder
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 8 tablespoons of cold unsalted butter
- 1 cup buttermilk
- Melt 2 tablespoons of salted butter to coat
A clue
- Preheat the oven to 425. Sift the flour, baking powder, sugar and salt into a large bowl. Transfer to food processor. Cut frozen butter into cubes and add flour, then recover 6 or 7 times until it looks like loose crumbs. Put the mixture back into the bowl, add buttermilk and stir with a spatula until the rough ball is formed (don't worry if it's a bit sticky).
- Roll the dough on the tangled surface and roll it into about one centimeter thick, rough rectangle. Fold and roll again. Repeat 6 times.
- Carefully roll the dough to form a rectangle. Slice the cake mixture with a cup or cake cutter. Do not twist the cutter when cutting. This will push the tip of the biscuit so that it doesn't rise. If you have notes, simply reformat the box and cut additional cookies.
