2 tablespoons of fresh lemon juice or white vinegar
1 cup (224 g) milk (full or low fat)

Measure milk in a jug
Stir milk with lemon juice or vinegar. Toss to join. Leave for 30 minutes at room temperature until the milk begins to flow and becomes acidic.
Use buttermilk in recipes as needed. And if you don't use it immediately, store it in the refrigerator for up to 3 days.
