You might still be able to find the actual buttermilk, but I suspect milk fermented with some sort of lactobacillus is removed. It will be fine, but more sour and traditional aromas disappear. One of my grandfathers drank a liter of "sour dock" every day, thinking he would die too young. This may have more to do with injuries and military lifestyles than skim milk.
